Ingredients

  • ⅔ cup whole milk
  • 5 tbsp butter, melted
  • 3 tbsp The Great Coffee Project ® 6 Bean Espresso or Italian Roast Coffee, finely ground
  • 1 tsp vanilla extract
  • 1 large egg, beaten
  • ¼ tsp salt
  • 2 cups all purpose flour
  • ⅔ cup sugar
  • ½ cup semisweet chocolate chips
  • 2 tsp baking powder

Instructions

  1. Preheat oven to 440 degrees F. Combine the wet ingredients (milk, butter, espresso, vanilla, egg)
  2. Whisk together dry ingredients (flour, salt, sugar, chocolate chips, baking powder, salt)
  3. Slowly add wet ingredients to the dry ingredients and stir until the entire mix is moist. Carefully pour the batter into muffin cups or muffin pans.
  1. Bake 18 minutes or until toothpick inserted into cupcake comes out clean. Cool in pans on wire rack 5 minutes. Remove from pans; cool completely.
